Ingredients:

10.6 oz jar Organic Tahini (with the oil on top included; used Trader Joe’s brand)

8 oz bag of Coconut chips (used Trader Joe’s brand)

2 scoops collagen peptides (used Thrive Market brand)

8 pitted Medjool dates

2 Tbsp ground flax seeds

3 Tbsp coconut flour (used Thrive Market brand)

1 tsp sea salt

3oz chocolate bar, chopped (85% cacao or higher)

Directions:
Pulse coconut chips in food processor or high speed blender until it becomes liquified (alternatively, you can purchase pre-made coconut manna/butter and use 1 cup). Add in tahini, collagen, flax, dates, sea salt and coconut flour. Pulse until all comes together. Transfer to a bowl and stir in chopped chocolate bar. Put in fridge until hard enough to scoop and make balls. Transfer back to fridge to harden and store. Enjoy and share with friends 😊 .

Nut-free Energy Balls

June 30, 2019 Shannon Patterson
Balls recipe.JPG

Ingredients:

1 c pumpkin seeds (I sprouted mine to make them easier to digest)

1 c toasted coconut flakes (for nuttier flavor- I toasted myself in oven at 325 after tossing with some coconut oil and sea salt)

6 medjool dates, pitted

1-2 Tbsp melted coconut oil

*if you don’t toast your coconut flakes, be sure to add 1/2 tsp of sea salt to your mixture

Directions:
Blend pumpkin seeds and coconut in food processor until they turn to butter or liquefy slightly. Add the pitted dates and blend until is fully mixed and starts to ball up. If too dry, add coconut oil until the mixture stays together. Roll into balls and refrigerate to harden. Store in fridge.
